No reservations needed

It’s been quite a while since I’ve communicated to my followers sharing all my Yummy Reservations & Delightful Destination adventures.  Retirement, and life in general, just got in the way.  And, for some reason, I find myself with an abundance of time of my hands…I wonder why?  With the situation we ALL find ourselves in, (I’m not even going to say the words) the ability to experience new restaurants and re-visit some of my old favorites is impossible at this point.  Many people I know are supporting local restaurants by getting carry-out, so maybe you would like to share if you’ve been able to do this.   Even preparing some great food to create at home, is difficult.  I make it a point to spend as little time as possible in just shopping for the necessities.  I finally was able to grab a package of toilet paper this week!  And forget about traveling to any delightful  destinations – we, like you, are not going anywhere for the time being.  Limited trips to the grocery store and two weekly trips to my 95 year old father-in-law’s house are our only treats.  We’re all trying to make the best of this difficult situation and looking for the joy in this diversion we find ourselves in.  Cooking can be a great stress reliever and I’ve created some meals at home that my husband has raved over, especially the healthy donuts I made this past weekend.  I found the recipe on Pinterest and will definitely make these again – and maybe get more creative using other toppings. I am a “sprinkles” girl, so that may be my next batch. I also ordered powdered monk fruit sweetener for an icing topping.  If you are a Keto follower this is perfect (well, maybe not the sprinkles)!  The donuts were light, fluffy and very yummy!  I would have never guessed they were gluten-free.  Below is the recipe, to which I made a slight addition.  Trust me, they are easy to make, especially using my donut baking pan,

If you have little ones that need to work some energy out, you can even get them involved with doing other crazy toppings.  Be creative and make it a fun project.  It only makes 6, so be prepared for wanting to make another batch real quick!

Cinnamon Sugar Donuts

1 1/4 cups of Almond Flour

1/3 cup of granulated erythritol ( I used granulated monk fruit)

1 tsp. baking power

1 1/2 Tbsp. melted coconut oil

2 Tbsp. Almond Milk

2 Large Eggs

1/2 tsp. vanilla extract

*Cinnamon Sugar Topping (or use one of your favorite toppings)

3 Tbsp. of Granulated Erythritol (I used Coconut sugar)

1 tsp. cinnamon

1-2 Tbsp. of melted butter

Instructions:  Preheat your oven to 350 degrees.  Add all the dry ingredients to a large bowl and whisk until combined.  In a medium-sized bowl, add all of the wet ingredients, and whisk those until combined.  Pour the wet ingredients into the dry mixture and mix with a spatula until a thick batter forms.  Coat a donut pan or a cookie sheet with non-stick cooking spray and add the batter (in the shape of a donut).  If you are using a donut pan, fill slots 3/4 of the way full.  Bake at 350 degrees for 15 minutes or until golden brown (mine were perfect at 15 minutes).  Let them cool in the tray for about 15 minutes and transfer to wire rack to finish cooling.  In the meantime, mix your cinnamon sugar topping in a shallow dish.  Also, melt approximately 1-2 Tbsp. of butter in a separate shallow dish.  Dip the top of each donut first into the melted butter, and then into your topping.  Now enjoy!
